Is there any party combination better than cocktails and canapés? The bite-sized sandwiches take their name from the French word for "couch", which is a reference to the fact that the ingredients and garnish of a canapé sit on the base in much the same fashion that people sit on a couch. As the name suggests, canapés began in France in the 18th century, when members of the upper class began to serve them to their guests at cocktail parties. The British followed suit in the 19th century. While you would have to eat dozens of canapés to fill up, their size and variety make canapés the perfect accompaniment to a cocktail or a glass of prosecco.
Because they are usually served with cocktails, most canapés are either salty or spicy, partly to encourage guests to drink more. The strength of flavour of course depends on the ingredients, and canapés come in many different shapes and sizes. Created with a cracker, a small slice of bread, or a puff pastry, and cut into various shapes, canapés can contain everything from savoury butter to foie gras, caviar, fish or cheese. Some canapés are prepared by deep frying, but some are served fresh, ensuring an almost endless variety of combinations.

Well, that's only the half of it, because as you and your guests savour ten canapés each, you'll also be treated to two glasses of prosecco. And of course, Paul will be there to answer all your questions, and maybe even allow you to put up a canapé or two yourself!
