Ampersand Hotel's Executive Chef, Chris Golding, has worked at a number of London's best restaurants, including Grangers & Co. in Notting Hill, which was Bill Granger’s first UK restaurant, Nahm, Nobu Berkeley, Mirabelle and The Square, all of which are Michelin-starred. Chris also oversaw the launch of Galoupet in Knightsbridge. All of this experience means that he has a wide array of cuisines and cooking styles to draw upon when creating meals for Ampersand.
But Chris is especially proud of his sharing menu, which he has designed for maximum flavour with minimum calorific intake. The styles of Chris' sharing dishes consist of a variety of Mediterranean food with incredible flavours and the freshness of their ingredients.
Unlike traditional Spanish tapas, Golding's versions are not dependent on heavy meats and frying oils, but rather light, flavourful recipes and amazing flavour combinations. Taking the best of this social meal, which encourages sharing, Golding has created a modern version of tapas that sacrifices calories not flavour. As Golding says, "when creating the menu I was inspired by the European culture of communal eating, where food and drink bring people together".
