Ampersand Hotel's Head Chef, Chris Golding, has worked at a number of London's best restaurants, including Grangers & Co. in Notting Hill, which was Bill Granger’s first UK restaurant, Nahm, Nobu Berkeley, Mirabelle and The Square, all of which are Michelin-starred. Chris also oversaw the launch of Galoupet in Knightsbridge. All of this experience means that he has a wide array of cuisines and cooking styles to draw upon when creating meals for Ampersand.
But Chris is especially proud of his grazing menu, which he has designed for maximum flavour with minimum calorific intake. Chris' sharing dishes consist of a variety of Mediterranean food with incredible flavours and the freshness of their ingredients.
Unlike traditional Spanish tapas, Golding's versions are not dependent on heavy meats and frying oils, but rather light, flavourful recipes and amazing flavour combinations. Taking the best of this social meal, which encourages sharing, Golding has created a modern version of tapas that sacrifices calories not flavour. As Golding says, "when creating the menu I was inspired by the European culture of communal eating, where food and drink bring people together". Bring your friends together at the elegant Ampersand Hotel in South Ken, where you can relax with cocktails and canapés before sitting down to enjoy the Chef’s selection of his best dishes from a Mediterranean tasting menu, served grazing style.
For this social, we’d suggest a kick-off time around 7pm, with the format as follows — guests arrive to enjoy cocktails and canapés in the elegant Drawing Rooms of the Ampersand, one of the most stylish hotels in London. There are three fantastic cocktails to choose from: The Americano, with sweet vermouth and Campari topped with soda; the Aperol Spritz, with Aperol topped with Prosecco; or a classic G&T, with your choice of gin. You and your guests can relax and socialise as you pique your appetite for a delicious dinner. Typically arrivals take about 30 minutes.
Around 7:30pm, guests will be taken into The Wine Room- a comfortable setting for the perfect social meal. Exactly what that meal consists of can be up to you, or alternatively let the Chef select five dishes from a Mediterranean-style grazing platter which you'll share with your neighbour. Choose savoury smoked cod roe; or sea trout poached in olive oil, served with courgettes, sorrel and lemon; or try a hearty grilled beef onglet, with harissa and baby gem. There are more than two dozen dishes to choose from on this modern Mediterranean tapas menu, so you're sure to find a few dishes that make your mouth water! Whatever you choose is sure to be delicious, as Chef Chris Golding says, "All menus have been created with seasonality in mind and using the finest ingredients". You'll have a chance to ask him about his ingredients in person, as during your meal, Golding will visit you in the Wine Room to talk about his process of creating some of the most delicious Mediterranean food in London. Then, you'll enjoy your choice of tea or coffee, along with a selection of delicious French Madeleines. The evening usually wraps up around 10:30pm, but feel free to stay on if the night is going well!
