Simply put, Kaspar's has some of the freshest seafood in London. You'll be enjoying their oysters, which are delivered daily. The Chef is constantly monitoring the local supplies, to see which variety of oyster is in top season, offering the plumpest and most flavourful bites.

In case you were wondering what the numbers mean beside the names of certain oysters, it's the size. The smaller the digit, the larger the oyster, from 00 to 5. Of course, the price increases as the size becomes larger. And, each size has its own flavours and intensities.

The flavour and texture of oysters change throughout the year, as the temperature of the water changes. Most epicures agree that the finest season for harvesting oysters is in the late autumn and early winter.
