Marek Fichtner's adventurous spirit isn't just limited to the kitchen.
Before returning to the Czech Republic to work at the Kempinski Hybernská Prague, Le Grill's executive chef spent 11 years overseas, soaking up exotic influences and ideas that inform his culinary creations today.
For seven years, Fichtner honed his skills on oceangoing cruise ships, rising to the rank of executive chef on the Constellation, the flagship of the German-based Peter Deilmann Cruise line.
More recently, he worked as a chef de cuisine in Saudi Arabia, an experience that saw him prepare meals for King Abdullah Bin Abdulaziz and other members of the Saudi royal family. During this time, Marek also prepared food for the heads of state of Bahrain, Kuwait, Oman, Qatar and the United Arab Emirates at gatherings of the Gulf Cooperation Council.

Occupying a meticulously restored 15th-century Baroque palace known as U Věžníků, the five-star Kempinski Hotel offers excellence in all areas, including its restaurant and beautiful garden, which is the perfect spot to enjoy a relaxing summer evening. For lighter, summery fare you have swordfish on black rice with baby calamari, lobster sauce and confit of cherry tomatoes. For desserts, your worldwide culinary journey has a sweet ending with such choices as lemon souffle with candied oranges, homemade cookies and a shot of hot Valhrona chocolate.
If you prefer to keep things closer to home you might want to make your selections from the “Local Favourites.” Starters here include creamy white tomato soup, pearl barley risotto with goat gervais and rocket salad, and more, while mains offer you choices such as a duo of pepper-crusted pork fillet and belly with parsnips, beetroot mousse and grainy mustard sauce. A trilogy of Bohemian desserts is the perfect way to end a summer evening.
