Spaghetti, lasagne, tagliatelle, gnocchi, linguine, fettuccine ...need we go on? Latest records show there are 310 specific forms of pasta known by over 1300 names. How do you know which pasta to combine with which sauce? In general, simple sauces like pesto are best for long, thin strands of pasta while tomato sauce combines well with thicker pastas. So really, the sauce chooses the pasta, not the other way around.
There’s lots of history surrounding pasta, but this is a very romantic legend about how tortellini came to be. The story goes that tortellini was created as a tribute to Venus, the goddess of love. Venus was staying in a tavern on the outskirts of Bologna. The curious innkeeper tried to spy on her through the keyhole of her room, but could catch only a glimpse of her navel. Entranced, he went to the kitchen and, to capture this vision, shaped fresh egg pasta into the navel shaped tortellini.
And exactly how much do Italians love their pasta? The US-based National Pasta Association reports that in Italy, 51 pounds of pasta are consumed by the average person yearly. Compare that to the 15.5 pounds of pasta eaten yearly by the average individual in North America.

If you’ve been having visions of pesto, sun-dried tomatoes, a little Parmesan--or just looking for a trattoria in Prague that cooks like your Italian grandma did (if you have one, or just wish you did) let us introduce you to Pasta Fresca. The restaurant’s love of food is easy to experience the minute you walk in the door and smell fresh pasta. Chef Tomáš Mykytyn has designed an intriguing tasting menu in which you’ll delight in 4 different pastas, each served with a different wine. Gnocchi with truffles and truffle oil will get you off to a good start, followed by a completely different taste of tagliatelle with Neapoletan ragout. Spaghetti makes an appearance the third time around, paired with tomatoes, Italian bacon, chilli peppers and pecorino cheese. And for the grand finale, tortellini with gorgonzola cheese, pears, cream and nuts.
Chef Tomáš Mykytyn trained at two Italian cooking schools and worked as a chef in Bologna, so you know the dishes coming from the kitchen are authentic. When it comes to cooking, he has three key rules: fresh, in season and traditional Italian. Pasta Fresca prides itself on its homemade pasta, and they have 3 sommeliers on staff so every detail is covered. Pasta Fresca is located in a Gothic cellar that’s been brightened into a sleek and modern restaurant. Multiple dining rooms means there’s plenty of space to fit larger groups, or reserve a quiet table for two.
