Alessandro Pavoni Executive Chef & Owner

When he’s not in the kitchen you can often find Alessandro long boarding in the Northern Beaches or taking in a little sea-breeze on his Harley, but working with fresh produce and creating masterpieces in the kitchen is where his passion lies.

Alessandro was born in Brescia, in Northern Italy. At the age of 10 he discovered a passion for food, which oddly enough was inspired by an overwhelming desire to eat an entire 3 kilo stuffed hen cooked by his grandmother.

Alessandro began his culinary career working in various Michelin starred establishments in Italy and France before moving to Sydney in 2003. After his role as Executive Chef at the Park Hyatt he began his first restaurant venture as Ormeggio at The Spit in 2009.

It didn’t take long for Ormeggio to make its mark in the industry and it quickly became a North Shore dining institution. Within 9 months Ormeggio was already amongst the best of Sydney dining with a Chef-Hat win. Not bad, not bad at all!

Chef-Hat winner, Ormeggio at the Spit is only a short trip across the bridge from the city, yet sitting water-side at Ormeggio feels like you are miles away without a care in the world! Ormeggio, a fitting name meaning “mooring” in Italian, sits perched over the water at d’Albora Marina by The Spit bridge.

The space is casually elegant and simple, allowing the breathtaking water views to dazzle. That is until the food arrives! Ormeggio is home to award winning Italian Chef Alessandro Pavoni, who ensures that the menu is always making the most of the freshest produce available.

The 4-course degustation menu has been put together as a well-rounded balance of flavours that Ormeggio at The Spit is famous for. The sweet, earthy flavour of salsify goes perfectly with a little fresh truffle, pecorino cheese, mushroom purée & toasted pine nuts; followed by folds of paccheri pasta, char-grilled sardines, sultanas, fennel purée & lemon crumble.

The next dish to hit your lips will be a blackmore wagyu rib cup, pickled jerusalem artichoke, spanish onion purée topped with peppery herbs; last but not least, the inventive ‘flavours of autumn’ which combines the usually savoury flavours of pumpkin, chestnut cream & balsamic vinegar gelato. A delightfully different dessert that finishes off this creative menu perfectly.

Alessandro Pavoni has an understanding of flavours that showcases seafood and regional produce. With a menu that changes with the seasons, you are assured that you can return to Ormeggio at The Spit time and time again and try a new sensational surprise!
